Clockwise from left: Smokey Corn with Dates, Rice with Beans, Corn & Tomatoes, Refried Beans and (messed up) Pupusas with sour supreme and salsa.
The corn thing was supposed to be the filling for empanditas (it's delicious by the way) but I fucked up the pastry so I just had it on the side. I also accidentally put in curry powder, but it still tasted good!
The pupusas didn't quite turn out like pupusas... I couldn't handle the dough well and ended up making them crescent shaped.
I should face the fact that I am no good (and lack the patience) with pastries or doughs!
It was a yummy dinner though.
I'm really bad at dough handling as well. I was able to do okay with the empanaditas, which surprised me, but I can't do things like biscuits, and even pizza dough and bread generally give me fits. And those shouldn't be hard! I was shocked that I was able to make the scones with no problem, actually. So yeah, I hear you on the dough handling!
ReplyDeleteThe empandita dough was a complete fucking disaster. It looked okay in the food processor and even when I wrapped it in saran wrap. It all went wrong when I went to roll it out and it was not pliable at all.
ReplyDeleteI suck with baking because it's such an exact science unlike cooking where you can add something here and remove something there to suit your tastes.
The only reason why I can make good bread is thanks to my old friend the bread machine... though I have been known to fuck that up too by adding too many extra ingredients.
I pretty much suck at baking too. I'm always amazed when my baked goods are a success.
ReplyDeleteI consider these idiot proof because if I can make them anyone can.
- pumpkin muffins and banana split brownies from Vegan with a Vengeance
- orange biscotti from Vegan Planet
- coconut lime cookies from Vive le Vegan
- banana walnut bars from Garden of Vegan
BTW what are pupusas?
Pupusas!

Maybe I will try and make those coconut lime cookies. They were really good. I can't believe you only brought me two when you brought me cookies before. They were gone in a second.
That's because Mr Shado ate the rest! He couldn't believe how good they were.
ReplyDeleteYou must make them.
That's good to know about the coconut lime cookies. I'd been eyeing them a while back. I can't remember why I didn't make them. They sound so good!
ReplyDeleteActually, I'm not bad at baking. I've only just started to develop the kind of "empty the pantry" cooking skills that let me throw things together and have them come out not bad at all. So I've tended to be a recipe follower, and baking hasn't been an issue of mine.
Except for bread. I fear it. It knows when I'm near nothing ever works out. Except, oddly, the empanadita dough!
Deb, definitely make the coconut lime cookies. When my sis (shado) brought the *two* over for me, I devoured them and wanted more. I just received my copy of Vive le Vegan and I will be making them soon.
ReplyDeleteMaybe to get over your bread fear, try the "big bread" recipe on Veg Web. Everyone who has tried it says it's really easy. I haven't tried it yet though because I have a bread machine... thanks to my sis who gave it to me for xmas a few years ago. She's the best!
