Comfort food!
The seitan recipe is from Fat Free Vegan Kitchen. I love this recipe and make this about once every 2 weeks. It's so easy and almost every vegan has these ingredients on hand. I always double the recipe and also add in a few extra tablespoons of peanut butter. I think it gives it a better texture and a little more body to the taste. Instead of grilling it, I usually just slather with sauce, wrap in foil and throw back in the oven for about 5-10 minutes, just enough time for the sauce to start soaking into the seitan.
The pasta salad was made with tri-colour fusilli, mixed vegetables and beans and the dressing was made with vegenaise, italian dressing, dill, salt and pepper.
On the top left is some kale that was sauteed with olive oil, garlic, salt, pepper and a splash of balsamic vinegar.
The seitan baking in the oven made my entire house far too hot, but it was worth it.

You should try it! For BBQ sauce we usually cycle between all 3 of Annie's brand BBQ sauces (original, smokey maple, hot chipotle) but this one we used Bull's Eye original which happens to be vegan (no worcestershire sauce and no sketchy "natural flavours").
Kale = MY comfort food, for sure. Yum!!
I love kale too! I've been eating so many greens lately because it's in season right now. It will be sad when it's no longer in season but I am definitely looking forward to okra and tomato season here!
That meal looks so good! I love those bbq ribz. I keep turning on my oven too, which is ridiculous for this time of year. I can't help that I want baked food!
Hi - looks fab - did you make the seitan or buy? I'm having problems finding gluten here in the UK!
veganwino, I make my seitan from scratch with vital wheat gluten. I know it's sometimes just packaged as "gluten flour" or maybe just "gluten"? Maybe shoot an email to your local vegan society to ask them if they know where you can get some? Good luck!
