Roasted Okra and Jalapeño & Vegetable Gratin



Oven roasted okra and jalapeño & vegetable gratin.

The okra was tossed with olive oil, salt & pepper and garlic powder and oven roasted until tender. The gratin had jalapeño peppers, zucchini, tomatoes, onions, Teese, Tofutti better than cream cheese and panko breadcrumbs. There's also some mushroom pizza in the background (top left) that was leftover from yesterday.

I used about 10-15 peppers and didn't wear gloves when cutting/handling them. My hands were burning for a few hours. Tomato sauce (jarred) was the only thing that seemed to get them to stop burning.

Mental note: wear gloves when handling hot peppers or don't bother with them at all.

ETA Again: Do try oven roasted okra. Not as good (IMHO) as breaded and deep fried okra, but it's a lot easier and still super tasty.

Thanks guys! It was pretty tasty. Sort of like a "cheesy" stuffed pepper but in a lazy casserole/gratin form.

That looks amazing. I've only had okra at Indian buffets. I will definitely have to try roasting it.

Wooooooooo.... the okra looks tasty, we don't have it so much around here but I'll definitely have to give it a try when I find a market selling the stuff.

The gratin sounds lovely! I think we all have to learn the hard way to wear gloves while working with peppers :)

I've yet to try okra, but you make it look so good & un-slimy! Nice video too; it reminds me of the way my gran would pronounce everything wrong & embarrass my sister & I.

@ tofu mom: Depending on where you live, fresh okra can be hard to find. I'm originally from Canada and it was hard to find fresh.

@ erin: Definitely! I guess I underestimated the power of the jalapenos!

@ destiny: Do try it! I know a lot of people don't like okra because of sliminess but roasting it seems to make it oh so good.
