Rice Vermicelli Lettuce Wraps



My mom used to (maybe still does) make something like this for Chinese New Year's. Haven't had it in years but I thought I'd try my hand at it. It's rice vermicelli noodles stirfried with tofu, nappa cabbage, bok choy, shiitake mushrooms and baby corn for lettuce wraps. It was pretty good!

They were made with glass (bean thread) noodles rather than rice noodles. Did you remember to add sesame oil?

Yours still looks yummy. I want some now!

Yeah, I know it was with glass noodles but I didn't have any, just rice vermicelli which was close enough. I did remember to add sesame oil. I stirfried it with soy sauce, mushroom sauce, sesame seed oil, some hot chili flakes a tiny bit of sugar and some cooking sherry.

Okay, that's kind of weird about PC have prepacked lettuce... I mean, it's lettuce pieces that they are marketing as "wraps". Just buy a freaking head of lettuce! :p

They're all about the convenience. I believe the wraps are pre-washed so it does save time on washing and spinning.

It's also supposed to be a cross between romaine and iceberg so they're shaped like romaine leaves but have the iceberg crunch. I seriously considered buying it! Then again, I am a lazy git :)
