Moo Shu Tofu



Moo Shu tofu with red peppers, onions, shiitake mushrooms in a (store bought) tortilla. Store bought vegan egg rolls on the right (they sucked).

Sure! It's pretty easy.

Slice a block of tofu into 12 slices and pan fry in a little canola oil until slightly crispy. Remove and drain. Slice each into slivers.

Then saute sliced onions, mushrooms, red pepper and garlic. While it's cooking, mix up the stirfry sauce -- 4 tbsp light Chinese soy sauce (or Japanese soy sauce), 2 tbsp vegan "oyster" sauce, 1 tbsp dry sherry and 1 tbsp sugar and set aside. When the vegetables are cooked to your liking, add in the tofu and mix in the sauce and cook until well mixed and the sauce is absorbed.

Take a flour tortilla shell or homemade mandarin pancake (recipe link to follow), smear on some hoisin sauce, put some filling in it along with some raw sliced green onion, roll up and eat!

I didn't bother making homemade pancakes, but this is my general recipe for homemade pancakes or flour tortillas:

2 cups flour with a bit of salt with 3/4 cups of boiling water. Mix and then knead, cover with plastic wrap, let sit for 30 minutes. Divide into 6 portions and roll out as thin as you can, dusting with flour as needed. Then cook on an UNoiled pan on medium high, about 1 minute on each side. That's it!
